We had our second day of visiting schools on Tuesday. It was set up identical to Mondays visits, with presentations, then school tours. I absolutely loved these schools and cannot wait to find out where I am placed!! Only eight more days until I know!! (: Wahoo!! The schools today were closer to Luodong (where I live) as opposed to yesterday’s schools which were closer to Yilan city. The schools were beautiful and huge, just like yesterday. Two even had ball pits! One school I found really cool had it’s own rice field that they harvest from, an organic farm and hiking trails. Then we went to the township of Su-Ao to visit schools and see the scenery. Su-Ao is what I picture when I think of Yilan. It is mountains and ocean and breathtakingly beautiful scenery. The port and beach were stunning. These pictures just do not do it justice. But trust me, it was perfection! I definitely plan on going back as much as possible.

After school tours, I went to dinner with the seven other Luodong ETAs. We went to an all you can eat hot pot restaurant. Hot pot is the coolest. You sit down and there is a hole in your table. They come put a big metal pot in there and it is filled with water and herbs and spices. You turn on your table and the water heats up. Then you go make your own sauce (I made a really spicy sesame vinegar, soy sauce, garlic and chili combo for my sauce. YUM!) Then you get a checklist and you just check everything you want. I got mushrooms, squash, fried tofu, udon noodles, and bean sprouts. The table got everything from shrimp, to eggs, oysters, lamb, chicken, and bok choy. It all comes out raw, and you put what you want into your individual hot pot to cook. Then you add your sauce, and voila! Best meal ever. It also comes with bottomless drinks and soft serve ice cream. It was awesome!
• Traveler Tip! • Hot pot is really great for all types of eaters because everyone individually chooses what they want and gets their own pot of water. So some people can eat vegan while others can eat meat. It's also good to go multiple times because there are so many options...and its all over the island!
It was a long but amazing day. Can’t wait for tomorrow!
